Sometimes we get so busy in our everyday lives that we often do not have a lot of time to make dinner or we just simply too tired to cook.

In our household, my husband and I, are often too busy to really even think about what would be good to have for dinner. Sometimes I just grab a ready to go salad and one of those healthy pre-made meals to cook in a microwave. It’s delicious none the less because we always eat together and we enjoy each other’s company.

But, I think preparing a little something for your family and friends is good for your soul and it’s even more special when you see them enjoying the meal and it’s much appreciated by everyone.

Sitting down to enjoy a meal together, for some people only happens on special occasions. But family dinner in my opinion is still one of the important things that ties us together, we talk about our day and catch up with what’s happening with each other.

In this months edition we are doing something a little of a mishmash or a little bit of mix of everything . So I thought I would share with you one of our favorites.

This recipe I discovered a couple of years ago and I put my own twist on it to make it a little bit more my own. It is so good and super easy to make.

First, we are going to put together a marinade for steak and we are going to pair our steak with a colorful bean salad. Very simple and I guarantee that your family will enjoy this as much as we do. The left over salad is even more tasty the next day.

Flank Steak Marinade

  • 3/4 c of soy sauce
  • 1/8 c olive oil
  • 3 tbs honey or brown sugar
  • 6 cloves of garlic minced
  • 2 tbs grated ginger
  • 2 small shallots minced
  • 1 tsp red pepper flakes, more if you like a little bit more heat
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 big plastic zip bag

Put all your marinade ingredients in a zip bag and mix, then your steak. Making sure the steak is well coated and set aside in the refrigerator at least 30 min. ( preferably one hour)

Bean Salad

  • 1 can  (15 oz.) black beans, rinsed and drained
  • 1 can (15 oz.) white kidney beans or garbanzo beans
  • Rinsed and drained
  • 2 large tomatoes, chopped
  • 3 green onions chopped
  • 1/4 c cilantro, add more if you like cilantro
  • 2 tbs grated lemon peel
  • 2 tbs lemon juice
  • 1 small jalapeno pepper chopped
  • 1/4 tsp of salt
  • 1 medium avocado cubed

In a glass bowl add all the salad ingredients together  mixing  the avocado last. Set aside in the refrigerator for at least 30 minutes. Serve with your steak and enjoy! Yum!
