Jojie’s Kitchen

So, when I first moved to America, everything was so different; new way of living, new food and new surroundings. However, one thing that has remained the same is the togetherness with family when meal time comes; we all sit down and talk about our day and catch up.

I learned to bake bread from my stepfather when I was seventeen, I will never forget how excited I was seeing the finished product and how good it was. It’s funny that I could bake bread and cookies, but couldn’t really cook a meal until much,  much later.

I’m going to show you this simple cheesecake recipe. It’s also called soufflé cheesecake.

I recently discovered that it doesn’t have to be hard to make cheesecake. In fact, all we need is something you might already have in you pantry.

You only need three ingredients. I’ve experimented with different ways, but I always come back to this three ingredient method … so simple, fast and delicious!

Three Ingredient Cheesecake

1 can (12oz) sweetened condensed milk
5 large eggs
1 8oz pkg cream cheese (softened)
Optional – Powdered sugar or powdered chocolate for dusting

Preheat oven to 325 degrees. Separate egg yolks and set aside. In a large bowl, using a hand mixer, beat cream cheese until smooth. Add sweetened condensed milk and mix for 1 minute. Add egg yolks and mix until fully combined for 1 to 2 minutes.

In another large mixing bowl, beat egg whites until they form a very firm peak; about 5 minutes. Gently fold egg whites into the sweetened condensed milk mixture until fully combined.

Be careful not to over mix, over mixing will break up the egg whites.

Tightly wrap an 8″ or 9” spring-form pan with aluminum foil and line the bottom with parchment paper or spray the pan with oil.

Transfer batter to pan, then place the pan in a large baking dish. Pour enough boiling water into the baking dish to reach 1/3 of the way up the outside of the cheesecake pan.

Bake for 50 minutes, then turn off heat and let cool in oven for 1 hour then remove.

Let cool completely until ready to serve. Dust with powdered sugar /chocolate before serving, if desired.

Serve and enjoy with a smile, make them think you spend hours making it.
