From time-to-time in every house hold, somebody always make too much food. But, eating leftovers sometimes can get old for some people.

The kids won’t even bother to eat with you anymore after a couple of days of eating the same food.
But I sometimes play around with recipes just to see what I can come up with, I have to admit that I don’t always end up with a hit dish when transforming left overs.

But I’ve come up with an easy fried rice recipe using your leftover meat from last nights dinner.

In this issue we will put together a delicious and easy meal using your leftover rice and smoked sausage (kielbasa). And of course as always, you can use whatever you prefer to mix with your fried rice.

Remember that this recipe is very flexible you can modify it however you want.

Fried Rice

  • 2 1/2 c ( day old ) steamed rice
  • 1 1/2c chopped cooked sausage (Polka kielbasa)
  • 1/2 of small onion chopped
  • 2 stalks of green scallions chopped
  • Save the green part for garnish
  • 1/4c of red peppers
  • 1/2c of corn (or whatever leftover veggies)
  • 2 eggs scrambled
  • 2tbsp light soy sauce
  • 4tbsp olive oil
  • Salt and pepper to taste

First you will need to break apart the rice, it should be broken up like ground beef.

Fry eggs with 1 tbsp of olive oil, set aside In a medium pan or wok, heat oil.

Saute the sausage, onions, white part of scallions, red peppers and corn (veggies) for about 2 min.

Add rice, cook for 3-4 min, occasionally stirring, add eggs, soy sauce, gently stir, add salt and pepper to taste.

Enjoy on it’s own or pair with your favorite dish , maybe fried spam or leftover adobo. Yummy!
